1 ¼ cups brown sugar
½ cup margarine
1 ½ cups mashed, cooked winter squash
2 eggs
2 ½ cups all-purpose flour
4 teaspoons baking powder
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
1 cup raisins
1 orange, zested

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.

  2. Combine brown sugar and margarine in a large bowl, beat with an electric mixer until fluffy. Beat in squash and eggs. Add flour, baking powder, vanilla extract, salt, cinnamon, and ginger, mix until dough comes together. Fold in raisins and orange zest.

  3. Drop spoonfuls of dough a few inches apart on the prepared baking sheets.

  4. Bake in the preheated oven until edges are firm and tops are golden, about 15 minutes.
