Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add rice, cook and stir until heated through, 2 to 3 minutes. Stir in soy sauce and sesame oil. Add onion, red bell pepper, mushrooms, and green onions, cook and stir until tender, 5 to 10 minutes.

A quick and easy fried rice for vegans! Works great when you have a few things around the house that you need to use up. Only the rice, soy sauce, and sesame oil are mandatory. Throw in whatever else you want - this is only my favorite way!
