1 pineapple - peeled, cored, and cut into chunks
1 (6 ounce) can pineapple juice
¾ cup white sugar
2 tablespoons lime juice
1 tablespoon vodka
2 leaves fresh mint

Directions

  1. Place pineapple, pineapple juice, sugar, lime juice, vodka, and mint in a food processor and process until smooth.

  2. Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container, put in the freezer for at least 6 hours before serving so it can firm up.
