¼ cup butter, melted
¼ cup all-purpose flour
4 eggs, beaten
1 cup white sugar
1 (20 ounce) can crushed pineapple, in juice
1 pinch ground cinnamon

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. In a medium bowl, mix together the butter, flour, eggs and sugar until well blended. Stir in the crushed pineapple. Transfer to a small casserole dish, and sprinkle cinnamon over the top.

  3. Bake for 1 hour in the preheated oven, uncovered. Serve warm.

A mixture of pineapple, flour, butter eggs and cinnamon. Excellent side dish with ham or pork roast. My in-laws are from Pennsylvania;this recipe is from some of the aunts who live there. A Christmas dinner must-have!
