¼ cup chicken stock
1 teaspoon kosher salt
½ red bell pepper, thinly sliced
½ yellow bell pepper, thinly sliced
½ orange bell pepper, thinly sliced
1 tablespoon lemon juice
1 lemon, sliced
1 ½ tablespoons capers
4 cloves garlic, crushed
1 tablespoon olive oil
4 sprigs fresh thyme, or more to taste

Directions

  1. Preheat oven to 375 degrees F.

  2. Season chicken breasts with salt and pepper. Place in a skillet coated with vegetable cooking spray. Sear chicken, about 3 minutes per side. Set aside.

  3. In casserole dish, combine chicken stock, 1 teaspoon salt, bell peppers, lemon juice, lemon slices, capers, and garlic. Place chicken in dish and top with olive oil and thyme sprigs. Cover dish with aluminum foil and bake 40 to 45 minutes or until chicken reaches internal temperature of 170 degrees F.
