3 (10 ounce) cans diced tomatoes and green chilies, drained
3 cucumbers - peeled, seeded and chopped
2 roma (plum) tomatoes, chopped (or more to taste)
1 bunch fresh cilantro, chopped
¼ cup chopped onion, or to taste
1 jalapeno pepper, seeded and minced, or to taste
kosher salt to taste

Directions

  1. Mix together diced tomatoes and green chiles, cucumbers, roma tomatoes, cilantro, onion, jalapeno pepper and kosher salt in a bowl. Serve immediately, for best flavor, chill for at least one hour.

Recipe Note

This is such a fresh and light salsa. I made this one day when I needed some extra ingredients and decided to throw some cucumbers in. I now make this for every picnic or party I go to. It is requested. Wherever I am, I have to give the recipe to someone. I keep this in my fridge at all times and all my kids love it. A great way to get them to eat their veggies.
