½ cup packed brown sugar

½ teaspoon salt
1 cup unsweetened applesauce
1 cup 2% milk
2 large eggs, at room temperature
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
¾ cup chopped pistachios, or more to taste
¾ cup dried cranberries

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or spray with cooking spray.

  2. Combine rolled oats, brown sugar, baking powder, and salt in a large mixing bowl and mix well.

  3. Combine applesauce, milk, eggs, butter, and vanilla extract in another bowl, whisk until thoroughly combined. Pour into dry ingredients and mix thoroughly.

  4. Scoop batter into prepared muffin tin almost to the top. Top with pistachios and cranberries.

  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
