½ large red onion, minced
4 green onions, minced
3 garlic scapes, minced
1 red bell peppers, minced
2 carrots, peeled and minced
2 large stalks celery, minced
⅓ large English cucumber, minced
⅓ zucchini, minced
2 (15 ounce) cans chickpeas (garbanzo beans) - drained, rinsed, and mashed with a fork
2 tablespoons capers, with liquid
¼ teaspoon ground paprika
⅛ teaspoon cayenne pepper
¼ cup Italian-style salad dressing
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
12 slices whole-wheat bread

Directions

  1. Mix red onion, green onions, garlic scapes, red bell pepper, carrots, celery, English cucumber, zucchini, chickpeas, capers, paprika, cayenne pepper, and Italian dressing together in a large bowl. Season with salt and ground black pepper.

  2. Drizzle olive oil on one side of each bread slice and spread chickpea mixture on half the slices. Top with second piece of bread to make a sandwich.
