4 cups cubed potatoes
1 (16 ounce) can diced tomatoes
¾ cup minced onion
3 tablespoons butter
1 ½ teaspoons minced garlic
½ teaspoon salt
1 ½ cups cashews
1 ½ ounces fresh spinach
1 ½ teaspoons red pepper flakes
1 cup shredded Cheddar cheese
¼ cup ranch dressing
¼ cup hot sauce, or to taste

Directions

  1. Combine potatoes, diced tomatoes, onion, butter, garlic, and salt in a stockpot, bring to a boil. Reduce heat, cover, and simmer, stirring every 10 minutes, for 25 minutes. Remove the lid and continue cooking for 10 minutes more.

  2. Stir cashews and spinach into potato mixture, cook until spinach is lightly wilted, about 3 minutes.

  3. Transfer potato mixture to a serving dish, top with Cheddar cheese, ranch dressing, and hot sauce.
