Ingredients

3 pounds beef tongue
2 tablespoons olive oil
1 teaspoon lime juice
1 teaspoon paprika
salt and ground black pepper to taste

Directions

  1. Place tongue in a large stockpot and cover with water. Bring to a boil over medium heat. Boil tongue for 2 hours. Turn heat off and let cool for 1 hour. Peel the skin off tongue and discard.

  2. Transfer tongue to a cutting board and cut into 1/2-inch slices. Drizzle with olive oil and lime juice and season with paprika.

  3. Preheat an outdoor grill to medium heat and lightly oil the grate. Grill tongue slices for 6 minutes, flipping halfway through cook time. Salt and pepper to taste.
