2 cups seedless red grapes, halved
1 cucumber, chopped
½ cup cooked quinoa, or more to taste
¼ cup chopped fresh mint, or to taste
¼ cup chopped fresh spinach, or more to taste
⅔ cup toasted slivered almonds
1 teaspoon salt
8 teaspoons grapeseed oil
8 teaspoons lime juice

Directions

  1. Toss grapes, cucumber, quinoa, mint, spinach, and almonds together in a large bowl, sprinkle salt over the top.

  2. Whisk grapeseed oil and lime juice together in a small bowl, pour over quinoa mixture and toss to coat. Refrigerate until flavors combine, at least 3 hours.
