2 ½ cups whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
1 pinch nutmeg
2 medium apples, peeled and sliced
2 plums, peeled and sliced
2 teaspoons butter, melted
1 cup white sugar
½ cup applesauce
⅓ cup orange juice
¼ cup oil
2 eggs, lightly beaten
2 teaspoons minced fresh ginger
2 teaspoons vanilla extract
3 tablespoons white sugar
1 teaspoon ground cinnamon

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.

  2. Sift together flour, baking powder, baking soda, cinnamon, salt, and nutmeg into a large bowl. Toss 1/2 of the apples and 1/2 of the plums into the flour mixture. Place remaining apples and plums in a second bowl and toss with melted butter.

  3. Mix together sugar, applesauce, orange juice, oil, eggs, ginger, and vanilla extract in a third bowl. Mix together sugar and cinnamon in a small, fourth bowl.

  4. Fold applesauce mixture into the flour mixture until just moistened. Pour 1/2 of the batter into the prepared baking pan and layer with apples and plums. Pour remaining batter on top and sprinkle with cinnamon-sugar mixture.

  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes.
